Brownies are one of those things that just adds up to happiness. We have a small group that we fellowship with, and our main source of nourishment is this handy little treat. The only thing we disagree about is whether or not brownies should include nuts.
It also stands to reason that they can be considered a comfort food. Someone recently had a loved one pass away, and I threw together a pan of these to take to their home. Sometimes a little sweetness can go a long way to help heal a broken heart.
I usually make a compact fudge number for large groups, but this time I only needed a small batch, so I pulled out my Fluffy Cake Brownie recipe.
These guys are soft, moist, last a bit on the kitchen counter, and so worth the eye candy of having a glass of cold milk on the side.
Now, let’s get to the good stuff!
For this recipe, you’re going to need one and a half cups of sugar, three fourths of a cup of melted unsalted butter, a half of a cup of cocoa powder, one and a half cups of all-purpose flour, one teaspoon of baking powder, a half of a teaspoon of baking soda, a half of a teaspoon of salt, two large eggs, one teaspoon of vanilla, one cup of milk, and one cup of chocolate chips.
Start by preheating your oven to 350 degrees and grease a 9×13 cake pan with either butter or non-stick cooking spray.
You all know I’m old-fashioned when it comes to baking, so you know what comes next.

In a large mixing bowl, stir together your sugar, cocoa powder, flour, baking powder, baking soda, and salt. In a smaller bowl, whisk together your melted butter, eggs, vanilla, and milk.
Once you have your wet and dry ingredients prepped, combine them to form your batter. Be sure they are thoroughly incorporated.
Next, gently fold in your chocolate chips. Use a cake spatula to do this so it doesn’t break up your morsels.
Pour the brownie mixture into your greased pan and evenly spread it edge to edge with the cake spatula. Put it in your preheated oven and bake it 35-45 or until a toothpick comes out clean.
Let your brownies cool completely before you cut into them. Hot brownies will stick to your knife and break up the top layer.
This recipe requires a lot of ingredients, but most of them can be found in your kitchen any old day of the week. In total, it took me about one hour to prep and bake, and the hardest part was waiting for them to cool.
They don’t have to be refrigerated, and if you’re lucky enough to still have some left over, they can last on the counter in a closed container for about five days.
