While we stay home today, I wanted to share a little recipe that always brings me comfort. Recently our church has begun to put together a cook book, which when finished I hope to share in our Good News segment. It got me in my Mama’s old recipes, calling family to find those comfort foods she always made for us. Today I am pulling out one of my favorite go to recipes for cold weather, vegetable beef soup! I wanted to share it with you. Maybe you too will be cooking soup today and making memories with your family as we slow down, stay home, and enjoy each other.
Vegetable Beef Soup
Ingredients
- 1lb to 2lb hamburger meat
- 1lb stew Beef
- 1 can of mixed vegetables
- 1 can green beans
- 1 can corn
- 2 to 3 potatoes diced
- 1 can lima beans
- 1 can diced tomato
- 1 can okra
You can also use frozen vegetables for this recipe if you desire.
♥ Directions
Brown hamburger meat and brown stew beef. Drain excess grease. Add vegetables and bring to boil until potatoes are tender. Simmer and serve hot.
I like to serve up mine with peanut butter sandwiches which is what my kids enjoy, or a nice grilled cheese sandwich. Yummy!
